Brewing authentic Ceylon coconut vinegar is a two-stage biological fermentation. Raw coconut sap collected without lime ferments via wild yeasts into alcoholic toddy (5-7% ABV) within 24 hours. The fermented liquid is transferred into wide, shallow wooden vats crafted from Halmilla or teak timber and inoculated with unpasteurized "mother of vinegar" culture containing Acetobacter aceti. The vats are covered with cotton mesh to facilitate oxygen circulation while keeping flies out. Over 10 to 12 weeks at ambient tropical temperatures (28-32°C), acetic bacteria convert alcohol into 4.5-5.5% natural acetic acid.
