We are tired of mild tourist curries. Where in the hill country can we find homestays that serve the unedited, fiery local estate food.

Skip Ella and Nuwara Eliya. Head to Haputale or Hatton and book a homestay in the actual tea estate "line rooms." These families cook traditional Sri Lankan Tamil food. You must explicitly tell the host, "Local spice level, no tourist adaptation." You will get incredible, fiery potato curries, Polos (jackfruit), and fresh coconut sambol loaded with crushed chili.

Many Hindu estate workers are vegetarian at home, but their veggie dishes are heavily spiced and very filling.
