Authentic Jaffna Crab Curry (Nandu Curry) uses blue swimmer crabs (Portunus pelagicus) cooked in a base of dark-roasted Jaffna curry powder (toasted coriander, cumin, fennel, dried red chilies, fenugreek, and black pepper). Towards the end of simmering, a handful of fresh drumstick leaves (Murunga / Moringa oleifera) is folded into the bubbling coconut milk gravy. In traditional Siddha medicine, Murunga leaves provide natural antihistamine polyphenols that temper shellfish allergens, while a small piece of dark palmyrah jaggery balances the fiery heat of roasted spices.
Crabs are cracked slightly at the large claws with a kitchen mallet before simmering to allow the spicy, tamarind-infused gravy to penetrate the sweet claw meat.
Serve with steamed red rice or warm roast paan (wood-fired bread) to soak up the thin, highly spiced curry broth.
