Boiling pure Kithul palm sap into solid jaggery cakes (Hakuru) requires careful thermal management over a wood hearth. Sweet sap (filtered to remove debris) is boiled in wide, shallow copper cauldrons for 3 to 4 hours. Once the reduction passes the viscous treacle stage (68° Brix) and reaches 115°C to 118°C ("hard-ball" stage), the bubbling amber syrup is removed from heat. The confectioner stirs the hot paste rapidly with a wooden paddle to introduce nucleation seed crystals. The cooling molten candy is ladled into cleaned, oiled coconut shell halves (Pol Katu) to solidify into solid brown hemispherical jaggery domes.
Counterfeit jaggery adulterated with commercial cane sugar has a gritty, crystalline mouthfeel; genuine kithul jaggery is smooth, melt-in-the-mouth, and distinctly woody-smoky.
Traditional jaggery cakes are wrapped in dried banana bark pouches (Kolapath) to prevent tropical atmospheric humidity from softening the firm sugar.
Pure kithul jaggery has a lower glycemic index than cane sugar, traditionally served with black tea or paired with fresh buffalo curd.
