Colombo has a legit specialty coffee scene now. Top picks: Kopi Kade (Cinnamon Gardens - single origin roasters), Cafe Kumbuk (multiple locations - flat whites + brunch), Whight & Co (Colombo 07 - Australian-style, top espresso), Sooriya Cafe (Bambalapitiya - lounge coffee scene), Barista at Union Place. Beans typically Ethiopian or local Kandy uplands. Expect 400-800 LKR for a good flat white.

Also: The Commons in Colombo 03 is coworking-friendly if you want to work + coffee. Best cortado in the city IMO. Local roaster 'Second Wave Coffee' supplies most of the good cafes - worth grabbing beans as a souvenir.
