I want to learn to make real rice and curry hoppers and kottu from a local family not a staged hotel class Where are the most authentic cooking classes and roughly what should it cost

The most authentic classes are the small home-kitchen ones where you start at the market buying vegetables and grinding fresh spices, then cook 6 to 8 curries on a clay stove. These are common around Galle/Unawatuna, Ella, Mirissa and Sigiriya, usually run by a family rather than a hotel. Expect roughly 25 to 45 USD per person including the full meal you cook. Hoppers and kottu are usually demonstrated since they need special pans and the chopping rhythm. Avoid the big resort "demonstrations"; look for a class capped at a handful of guests in a real home.

Ask them to teach you the coconut sambol and the tempered dhal, the two things you can actually recreate at home easily. Mine were a hit back in France.

In Ella several guesthouses (including ours) let you cook dinner with the family for a small fee. It is informal and you eat what you make together, which is the whole point.
