I am exploring the 19th century British colonial architecture on Chatham Street. Are there any historic pubs left to drink in, and where can I find an authentic Dutch Burgher Lamprais late at night after parting.

Chatham Street is amazing for history! Check out the Grand Oriental Hotel (GOH) Tap Bar; it has retained much of its colonial charm. As for Lamprais, true Dutch Burgher Lamprais (with the specific mixed meat curry and frikkadels baked in a banana leaf) is incredibly hard to find late at night. You usually have to pre-order it from places like VOC Cafe at the Dutch Burgher Union during the day. Midnight street spots sell rice and curry in a leaf, but it is not authentic Lamprais.

The Republic Bar in the Dutch Hospital precinct is a great place to drink. You are literally partying inside a 17th century VOC hospital building.

If you want a late night post party meal in Colombo Fort, skip the fake lamprais and head to Hotel de Pilawoos for an epic cheese kottu at 2 AM.

True lamprais must have belacan (shrimp paste) and exactly three types of meat: beef, pork, and mutton. Street stalls selling chicken lamprais are just selling normal rice and curry.
