Cinnamon leaf oil and cinnamon bark oil are chemically distinct products derived from Cinnamomum verum. Leaf oil is extracted from field prunings using large galvanized steam retorts fueled by spent firewood; its primary constituent is Eugenol (75-85%), yielding a clove-like, phenolic aroma with low cinnamaldehyde levels (under 5%). Bark oil is distilled from inner bark chips and quill trimmings in closed copper stills; its primary compound is Cinnamaldehyde (65-75%), yielding an intensely sweet, pungent aroma. Operating steam boilers above 105°C scorches the botanical material and caramelizes natural sugars, clouding the oil and lowering export quality.
