We are staying at an eco camp near Bundala and want to cook Southern Ambul Thiyal over a wood fire. Will the strong smell of the Goraka and fish attract wild animals like macaques or civets to our camp.

Yes, the savory and sour aroma of Ambul Thiyal will travel far in the dry zone air. It will almost certainly attract toque macaques and palm civets. Keep the clay pot tightly covered with a banana leaf tied down with string while it simmers, and never leave the cooking fire unattended.

The traditional recipe uses a lot of black pepper and goraka specifically to preserve the fish in the tropical heat. Let the water boil down completely until the fish is coated in a thick black paste.

Make sure you burn or bury your fish scraps far away from the campsite. Wild boars have a great sense of smell and will tear through your trash bags at night looking for the leftovers.
