I am highly allergic. Will the chefs be offended if I ask them to omit it.

MSG locally known by the brand name Ajinomoto is used heavily in cheap street food stalls specifically when making fried rice or kottu to aggressively boost the flavor.

However highly traditional slow cooked rice and curries rarely use MSG. Authentic Sri Lankan cooking relies entirely on natural coconut milk freshly roasted local spices and pandan leaves for its intense rich flavor.

It is absolutely not rude to ask. Local chefs will happily omit it if you explicitly request No Ajinomoto before they start cooking your kottu or fried rice.
