Pittu steamed rice flour and coconut cylinders is a classic highland breakfast Because it requires a special bamboo or metal steamer you usually have to request it from your homestay host the day before In the hills it is traditionally served with a very spicy meat curry like Babath Tripe or sweetened with fresh coconut milk and palm jaggery

Yes it is tripe They clean and boil it thoroughly It is a massive local delicacy
