Getting a stomach bug from street food is not incredibly common if you follow basic common sense rules. The golden rule is to only eat at stalls that are very busy with local customers, which guarantees high food turnover and fresh ingredients.
Always choose items that are cooked fresh on a hot grill right in front of you, like hoppers or kottu roti. Avoid pre cooked food sitting in lukewarm glass cabinets, and completely avoid any raw salads or pre cut fruit that might have been washed in tap water.
Most travelers diarrhea actually comes from accidentally swallowing tap water while brushing teeth or drinking drinks with ice cubes made from unfiltered water, rather than the street food itself.
