The Hambantota salterns utilize fractional crystallization driven by high dry-zone evaporation rates and constant winds. Sea water is routed through successive shallow pans (reservoirs, condensers, and crystallizers) where specific minerals precipitate at defined hydrometer densities (degrees Baumé): calcium carbonate settles first at 7-12° Be, followed by gypsum (calcium sulfate) at 12-25° Be. The brine enters the crystallization tables at 25-26° Be, where pure sodium chloride forms. The remaining dense liquid—bitterns—is drained off before 30° Be to prevent bitter, hygroscopic magnesium sulfate and magnesium chloride from co-crystallizing into table salt.
