Quality control in the marine salterns of Hambantota depends on daily pre-dawn hydrometer testing across evaporation stages. Ocean water enters at 3.5° Baumé (Be). As sun and dry-zone wind evaporate water through the condensers, iron and calcium carbonate drop out first, followed by gypsum (calcium sulfate) between 14° and 24° Be. Brine is channeled into shallow crystallizer beds strictly when it reaches 25° Be, where pure sodium chloride crystallizes. Once brine density climbs past 29.5° Be, it must be drained off as bitterns; allowing evaporation to reach 30°+ Be causes bitter magnesium salts to contaminate the food salt.
