Eating string hoppers Idiyappam gracefully with your right hand requires a specific technique. Do not try to pick up the entire noodle nest at once. You must first pour a generous amount of creamy dhal or potato curry directly over the nest to soften it. Then use your fingers to gently tear off a small bite sized piece of the softened noodles mix it briefly with a pinch of coconut sambol on your plate and scoop it into your mouth using your thumb. It takes practice but locals highly respect tourists who embrace the messy highly tactile experience.
