If you have zero tolerance for spice, you must be very explicit when ordering. Learn the phrase Sere Ne, which translates directly to No Spice in Sinhala. However, be aware that many local curries are pre cooked in massive pots early in the morning, meaning the cooks cannot alter the spice level later. Your safest bet is to order dishes that are cooked fresh to order on the spot, like Kottu Roti or Fried Rice, and insist they do not add any chili powder or fresh green chilies.
