Cheese Kottu is a massively popular, relatively modern evolution of the highly traditional Kottu Roti. While ancient Sri Lankans were not melting processed cheese over their flatbread, it is absolutely a genuine local street food invention.

Locals, especially the younger generation, absolutely adore it as a late night comfort food. It is incredibly rich, heavily spiced, and the melted cheese perfectly balances the intense chili heat. You must try it.
