I want to try Kavum and Kokis during the New Year. Are there things I should look out for to ensure the food is fresh and prepared hygienically.

Freshness is key with New Year sweets. Always look for stalls where you can see the Kavum being fried in front of you. This ensures the oil is hot and the product has not been sitting in the sun. For sweets like Kokis, check that they are stored in airtight containers to maintain crispness. Most importantly, trust your nose. If the oil smells old or rancid, skip that stall. April is very hot so be extra careful with any dairy based treats or milk rice. If the Kiribath has been out for more than two hours in the heat, do not eat it. Stick to the deep fried items for better food safety while traveling.
