The bowls look dirty. Are the famous egg hoppers safe to eat from a street cart.

Eating hoppers from a busy street cart is generally incredibly safe and highly authentic. The small bowl shaped pans they use might look charred and blackened but that is simply years of seasoned carbon exactly like a highly prized wok.

Just ensure you buy from a highly active cart where the batter is not sitting out stagnant for hours and the vendor is constantly serving fresh hot hoppers to a line of local customers.
