I want to try this famous street food. Can the chefs make it mild upon request.

Traditional Kottu Roti is definitely made to be incredibly spicy, packed with fresh green chilies and a heavy dose of fiery curry gravy. However, it is not always mandatory. Because Kottu is cooked completely fresh to order on a hot iron griddle, the chef has total control over the ingredients.

Even if you ask for it to be mild, the base curry sauce they pour over the bread might still have a tiny residual kick of black pepper. If you want a completely safe option, order a Cheese Kottu with zero spice, which adds creamy, cooling dairy to the mix.

You can absolutely request the chef to make it completely mild. Just firmly say No Spice and No Chili before they start chopping the roti. They are very used to tourists making this request.
