Crafting firm, crystalline kithul jaggery (hakuru) requires strict control over pH and temperature during open-pan reduction. Fresh sap begins fermenting into invert sugars (glucose and fructose) in collection pots, which inhibits the crystallization of sucrose into solid cakes. Tappers suspend small blocks of Hal bark (Vateria copallifera) or Kakuna bark inside the pots to release natural polyphenolic tannins that suppress wild yeast activity without requiring excess slaked lime. The sap is boiled in wide copper pans over firewood, reaching the "string" stage (around 115°C), then transferred to coconut shell molds where natural sucrose crystallization sets as it cools.
