Boiling fresh Kithul palm sap (Caryota urens) into viscous treacle (Pani) or crystalline jaggery (Hakuru) requires careful temperature and pH control. Fresh sap begins fermenting into invert sugars (glucose and fructose) in collection pots. Tappers suspend chips of Hal bark (Vateria copallifera) in pots; the natural polyphenols inhibit wild yeasts without altering sap taste. The sap is transferred into wide, shallow copper pans over a gentle wood fire. Boiling continues for three to four hours until volume reduces by four-fifths, reaching exactly 68° Brix for treacle, or 115°C "soft-ball" stage for pouring into coconut shell molds to set as solid jaggery.
