I keep hearing the clang clang clang of kottu being made and smelling it everywhere but I do not fully understand the dish What exactly IS kottu what is in it what are the varieties (cheese kottu egg kottu the dolphin one I saw on a menu) is it street food or restaurant where do I get a properly made one and what makes a good versus a sad kottu I want to order it right and find the real rhythmic chopped thing Street food people please explain

Kottu man so let me explain my craft What kottu IS the dish is godamba roti (a flat stretchy wheat flatbread) chopped and stir fried on a hot griddle with vegetables egg and or meat or fish and spices and curry sauce the CLANG you hear is the two metal blades chopping and mixing it on the griddle in that famous rhythm it is the sound of dinner being made it started as a way to use up leftover roti and became the nations beloved street supper savoury filling cheap and theatrical The varieties vegetable kottu (the base) egg kottu chicken kottu beef or fish kottu CHEESE kottu (the indulgent gooey modern favourite) and the dolphin kottu you saw on the menu is NOT dolphin (relax) it is a brand and style name for a loaded extra cheesy meaty kottu a marketing name not the animal also kiri kottu (milder) and the spicy ones ask for the heat you want it comes mild to fierce Street food or restaurant BOTH it is classic street and casual eatery food made at the roadside kottu stalls and the local restaurants in the evening it is an evening dish you hear the stalls fire up at night What makes a GOOD kottu fresh hot off the griddle (not pre made and reheated) a good balance of roti veg egg meat and enough curry sauce to keep it moist not dry well seasoned and made to order the rhythm and the crowd are the sign a busy stall with a queue and a steady clang is making good kottu a sad kottu is dry bland reheated and limp Where to get the real thing the busy evening kottu stalls and local restaurants where you can HEAR it being chopped to order follow the clang and the queue order the cheese kottu if you want the crowd pleaser the chicken or veg for the classic and tell them your spice level How to order it right pick your protein or cheese or veg state your spice level eat it fresh and hot with the side curry or gravy they give it is a knife and fork or spoon dish not a hand one and it is the perfect end of day street feast follow the clang

The made fresh to order versus reheated point is everything a hot just chopped kottu from a busy stall is incredible the limp reheated tourist version sold me on the dish being overrated until I had the real clanging one

Worth noting for the coeliac travellers from the allergy threads kottu is WHEAT (godamba roti) so it is off limits if you are gluten free a rare miss in the otherwise rice based cuisine

Chopped godamba roti stir fried with egg veg and meat the clang is the cooking and the dolphin one is just a brand not the animal this clears it up completely following the clang and the queue for a fresh cheese kottu tonight thank you
