There's a small Maritime Museum in Galle Fort with some interesting artifacts. In Trincomalee there's naval history and the famous 'Sailor's Graveyard'. Some shipwrecks are visible from certain beaches at low tide or after storms, but most are underwater and require diving. The old Dutch fort in Galle and the naval museum aspects in Trinco are the most accessible for non-divers interested in maritime history.

We visited the small museum in Galle Fort. It was interesting for an hour or so, especially combined with walking the ramparts.
