Morning toddy vs evening toddy, which is better to drink.

Locals told us to only drink it before noon. Does it go bad later in the day.

The locals are absolutely correct. You should only ever drink coconut toddy in the early morning, preferably before 10 AM. When it is freshly tapped from the tree, it is sweet, mildly fizzy, and very refreshing. As the day progresses and the tropical heat hits the liquid, it ferments incredibly rapidly. By late afternoon, evening toddy has turned highly acidic, sour, and contains a much higher alcohol content that will almost certainly give you a brutal hangover the next day.
