Hoppers (Appa) are traditionally eaten for breakfast AND dinner! Your homestay host will happily make them for breakfast, but you must ask them the night before. The batter is made with rice flour and palm toddy (or yeast) and needs to ferment overnight to get that perfect crispy bowl shape.

Some hosts prefer making string hoppers (the noodle nests) for breakfast because they are faster to steam in large batches, so just ask nicely!

Make sure to ask for "Lunu Miris" (chili onion paste) to eat with them. It is spicy but amazing.
