Palmyrah sap (karupatti) extracted from female Borassus palms in the arid north exhibits higher initial sugar Brix levels (14-16° Brix) compared to coastal coconut sap (12-14° Brix). This higher sugar concentration supports a slower, more complete fermentation cycle, yielding a heavier, more viscous, and earthy toddy with final alcohol levels reaching 6-8% ABV. Coconut toddy from the south ferments rapidly into a lighter, drier, more acidic and effervescent beverage. Tappers in Jaffna treat collection pots with slaked lime (chunam) to prevent morning fermentation when harvesting sweet sap for boiling into solid palmyrah jaggery.
