Authentic Sri Lankan curd (Meekiri) is made from unadulterated river buffalo milk, which contains high butterfat (7-9%) and milk solids. Boiled, filtered milk is cooled to 42°C in shallow unglazed terracotta pots (Walan or Kiri Chatti) and inoculated with starter curd containing wild lactic acid bacteria (Streptococcus thermophilus and Lactobacillus bulgaricus). The porous earthenware walls absorb excess free whey through capillary action, concentrating milk solids while evaporative cooling stabilizes internal fermentation temperatures, producing a firm, thick curd that holds clean slices.
