Authentic Sri Lankan Pol Sambol is traditionally made to be fiercely spicy, packed with aggressively crushed dried red chilies. If you scoop it from a standard hotel buffet, expect it to burn immensely.

However, if you order a fresh meal at a local guesthouse, simply ask the host beforehand to prepare the sambol entirely without chili. They will happily make a sweet, mild version using just freshly grated coconut, lime juice, red onions, and salt, which is incredibly delicious and completely safe.
