Food guide so the wonderful world of jackfruit (kos) which is a huge deal here Jackfruit in the diet the jackfruit tree is hugely important called a rice tree historically because it is so filling and sustaining a single giant fruit feeds many and every stage is eaten it is a beloved staple especially in lean times The different dishes by stage POLOS (young green unripe jackfruit) THE meaty one this is the famous one young jackfruit cooked into a dark rich spicy CURRY (polos ambula or polos curry) the texture is firm and stringy remarkably like pulled meat and it soaks up the spices so it is intensely savoury and satisfying THIS is the dish vegetarians and vegans rave about (the plant meat the vegan threads) a must try it tastes nothing like fruit KOS (mature but still unripe jackfruit) the flesh is boiled and eaten (kos ata the flesh) often as a curry or boiled chunks more substantial starchy filling the rice tree role RIPE JACKFUIT (waraka and vela the sweet ripe types) eaten as FRUIT the ripe bulbs are sweet golden fragrant and delicious eaten fresh a sweet treat (very different from the savoury polos) the SEEDS (kos ata) do not waste them the large seeds are boiled or roasted (nutty like a chestnut) and also curried a tasty snack and curry ingredient How they taste POLOS savoury meaty spicy (the star) KOS starchy filling mild RIPE sweet fragrant fruit SEEDS nutty chestnut like the same fruit gives you a meaty curry a starchy staple a sweet fruit and a nutty snack remarkable Which to try definitely the POLOS CURRY first (the meaty vegan friendly revelation) then try RIPE jackfruit as a sweet fruit and the boiled SEEDS as a snack you get the full range where polos curry features in a good rice and curry spread (homestays and local eateries do it well ask for it) so dive into jackfruit start with the famous POLOS curry (young jackfruit cooked meaty spicy and savoury the vegetarian wonder) then enjoy ripe jackfruit as sweet fruit and the nutty boiled seeds it is a beloved staple the rice tree and the polos curry is one of the great dishes of the island

The ripe jackfruit as fruit is wonderful too sweet golden and fragrant totally different from the savoury polos just be ready for how sticky it is to eat fresh worth it for the unique tropical sweetness have both the savoury and the sweet sides

Do try the boiled jackfruit seeds too people overlook them they are nutty and filling like a cross between a chestnut and a potato roasted or in a curry a great little snack and a reminder that nothing of the jackfruit is wasted
