True Ceylon cinnamon (Cinnamomum verum) is different from cassia (cheaper, sold as 'cinnamon' in most countries) — softer, thinner, aromatic quills, honey-brown color. Grades from finest to coarsest: Alba, C-5 Special, C-5, C-4, M-5, M-4, H-1 to H-2. Alba is the finest, most expensive.

Buying: for gifts and personal use, C-5 or C-5 Special is excellent value. Buy from Sri Lanka Cinnamon Bureau licensed suppliers or premium brands (MDK, Vasa). Costs: C-5 quills 4000-8000 LKR/kg. Beware roadside 'spice garden' cinnamon at 5-10x fair price.
