Sri Lanka has 100+ heirloom rice varieties — traditional varieties revived by conservation programs. Popular for foreigners: KURULUTHUDA (small red grain, aromatic), SUWANDEL (fragrant white), KALU HEENATI (black rice), RATHKARAYAL (red rice, popular staple), MADATHAWALU (parboiled red).

Buy at farmer markets (Colombo Good Market Saturday), specialty grocers (Kandy Fresh, Cargills Naturally section), and directly from conservation farms (Wewhena, Panduwasnuwara). Vacuum-sealed 1kg bags travel well. Nutty flavor, higher fibre than white rice.
