Eatery owner so the rice education rice is the heart of the meal and yes a point of pride The main types you will meet RED RICE the wholegrain hero red or brownish rice with the bran kept on (so it is wholegrain) NUTTY chewy earthy and filling and the HEALTHIEST (more fibre nutrients and a lower glycemic feel) it is traditional and beloved the country red rice (varieties like the heirloom and the rathu kekulu) many homes and the traditional and healthy eateries serve red rice it is wonderful with a rice and curry soaking up the gravies my pick for flavour and health SAMBA a short bold grained white rice (the grains are short and rounded) it is prized and considered a finer or more special rice (often for guests festive meals and biryani) keeri samba is a smaller finer fragrant premium samba (delicate and prized the best samba) samba has a satisfying texture and a slight stickiness NADU a popular everyday medium grain white rice (a common parboiled table rice) the practical daily rice for many a good all rounder BASMATI and other long grain are used for some dishes (biryani fried rice) but the local samba red rice and nadu are the heart Differences in short RED RICE wholegrain nutty chewy healthiest traditional SAMBA short grain white prized finer (keeri samba the premium fragrant one) NADU everyday medium grain white rice Which is healthiest RED RICE clearly (wholegrain) if health is your aim ask for red rice it is also delicious Which tastes best subjective RED RICE for nutty wholegrain depth (great with curry) KEERI SAMBA for a delicate premium white rice many love red rice with a village rice and curry try both Can you ask YES rice is taken seriously you can often choose red or white rice at an eatery (red rice is widely available ask for rathu haal or red rice) homes and good places will have a preference and pride Pride and region YES rice is cultural (the paddy heritage the rice tree threads) there are many heirloom and traditional varieties a revival of old rices and regional and varietal pride trying the traditional red and heirloom rices is a real food experience so appreciate the rice RED RICE (wholegrain nutty and the healthiest the traditional star) SAMBA and the premium fragrant KEERI SAMBA (short grain prized and festive) and everyday NADU ask for red rice for health and nutty flavour with your curry and savour that the rice is as much a point of pride and variety here as the curries

Seek out a place serving traditional heirloom red rice with a village rice and curry the combination of the nutty wholegrain rice with many vegetable curries and a sambol is the soul of the cuisine far more characterful than plain white rice it is worth choosing the red rice every time

Interesting how the rice changes the whole dish the same curries over nutty red rice versus delicate samba taste like different meals trying your curry with different rices is a fun way to appreciate how central and varied the rice really is here

Following up have been choosing red rice as advised and it is so much more satisfying and flavourful than plain white nutty and filling and it holds up to the curries beautifully thank you all I will never default to plain white rice here again

The keeri samba is lovely for a special meal finer and fragrant it feels like a treat compared to everyday rice so if you see it offered for a festive or nicer meal try it to taste the premium end of the rice spectrum a nice contrast to the rustic red rice

As someone into healthy food the red rice is a joy wholegrain filling and nutty and widely available just ask for it the fact that the traditional healthy choice is also the most flavourful is a lovely bonus I choose red rice wherever I can now
