Someone explain why hoppers are on every 'must eat' list. Was fine but not life changing.

Had one at the hotel, tasted like a crispy pancake. Am I doing it wrong or is this genuinely overhyped?

You had a hotel hopper. Sorry. Real hoppers = 6am, at a proper kade, made in front of you, eaten immediately with pol sambol, seeni sambol, dhal, and lunu miris. The temperature (hot), the crispness (fresh off the pan), the sambols (spicy, tangy, sweet) - that's the whole experience. Hotel hoppers sit under warmers and lose all magic. Try again. Ask your driver to take you to a busy kade at breakfast. Watch it get made. Then eat with your hands, sambols on the side.

^ so true. It's the same thing as saying 'pizza is overrated' after eating a Domino's slice. Also crucial: EGG hopper is the move. Plain hopper is fine. Egg hopper + pol sambol + a splash of that yellow dhal + fresh lime = actual religion.
