Ambulthiyal is tuna cooked with goraka (Malabar tamarind) and black pepper - dry-textured, deep umami, keeps for days without refrigeration (a coastal preservation method). Best experience: south-coast home restaurants or family-run kade in Galle, Matara, Weligama. Restaurant recommendations: Wijaya Beach Restaurant (Unawatuna), Pol Sambol (Weligama), Kaema Sutra (Colombo - elevated version). For real ambulthiyal: coastal fisherman's home meal via cooking class or small local. Best served with kiribath (milk rice) or plain steamed rice.
Also: Cinnamon Grand's traditional Sri Lankan restaurant Nuga Gama serves quality ambulthiyal in a heritage village setting. Not the most authentic but presentable + reliable. For the real deep-goraka version - find a village.
