Real kithul jaggery (from kithul palm sap - Caryota urens) is unique to Sri Lanka + South India. Best sources: (1) Rathnapura + Kegalle villages (kithul heartland - families still produce traditionally). (2) Good Market Colombo (Sunday - direct-from-farmer). (3) Sonjas Health Food (Kandy - certified organic). (4) Some Ayurvedic shops. (5) Some hotels sell in gift shops. Real kithul is dark brown, deeply caramelized, floral notes. Fake versions use molasses or sugar syrup - lighter color, uniform texture. Prices LKR 800-2500 per 500g bottle. Buy in liquid form (treacle) or solid block (jaggery).
