Sri Lankan pol roti (coconut flatbread) is quintessential breakfast: coconut flour + water + salt + fresh grated coconut = simple dough. Cooked on iron griddle. Served with dhal, sambol, or curry. Where authentic: (1) Village morning kade (before 8am). (2) Devon Restaurant Kandy. (3) Muslim Hotel Kandy. (4) Nawaloka Meals branches. (5) Homestay kitchen. (6) Nuga Gama Cinnamon Grand (upscale version). Village kade version 100-300 LKR per roti. Best paired with hot fresh dhal + coconut sambol + strong ceylon tea. Consumed fresh - doesn't hold well.
Question: is pol roti made differently in different regions? Reading about Muslim quarter version vs Sinhalese village version - are they meaningfully different or basically the same?
Difference between pol roti (with grated coconut) + plain roti (without) is meaningful. Pol roti = coconut-forward, richer, denser. Plain roti = lighter, breakfast quick option. Order specifically 'pol roti' to get coconut version. Some kade only make plain (ask).
