Sri Lanka vegetarian food guide - what should I actually order?

Sri Lankan cuisine is 60-70% naturally vegetarian. Order rice and curry (the classic plate) - you get rice plus 4-6 curries: dhal (lentil), pumpkin, jackfruit (polos), beetroot, gotukola sambol, pol sambol (coconut chili). Also try string hoppers with dhal, kottu roti (ask veg only), kola kanda (herbal porridge for breakfast), and thambili (king coconut). Warn: 'Maldive fish' hides in some 'vegetarian' sambols - specify 'no umbalakada'.
Also: hoppers (bowl-shaped rice flour pancakes) are vegetarian and delicious. Egg hopper technically has egg but standard hoppers don't. Get them fresh at a busy morning kade with pol sambol and yellow dhal. Life changing.
