Cinnamon leaf oil has a specific gravity greater than water (1.03 to 1.05 g/cm³) due to high eugenol concentrations; when steam condenses, the oil sinks to the bottom of the glass Florentine separator flask, and floral water discharges from an upper overflow tube. In contrast, pure cinnamon bark oil (high in cinnamaldehyde) has a specific gravity close to 1.01-1.03 g/cm³, requiring operators to regulate condenser cooling temperatures around 35°C to facilitate clean density separation.
