Commercial vanilla requires precise agricultural timing: flowers open for only 4-6 hours early in the morning and must be hand-pollinated using a bamboo needle to lift the rostellum flap. In the wet valleys around Kandy and Matale, harvesting must occur when the bean tips turn yellow. The traditional curing cycle requires scalding green beans in 65°C water for 2-3 minutes, followed by alternating cycles of sun-sweating in woolen blankets and slow wooden box fermentation over three months to achieve vanillin levels above 2.0%.

Over-pollinating the vine weakens the root architecture; limit pollination to 8-10 pods per cluster to ensure beans reach grade-A length (over 15 cm).

Excess rainfall during the maturation phase induces fungal mold inside the pod chambers; maintain adequate air movement by pruning living support tree canopies.

Sri Lankan cured vanilla displays richer chocolate undertones compared to Madagascan bourbon vanilla, making it sought-after by high-end pastry chefs in Colombo.

Indoor conditioning chambers operating low-wattage dehumidifiers improve consistency when monsoonal cloudbursts interrupt outdoor sun-curing.
