Wandu Appa (steamed hopper) is a bowl-shaped rice-flour-and-coconut-milk pancake COOKED IN STEAM rather than pan-fried like standard appa. Fluffier, chewier, less crispy. Traditional dessert version has jaggery and coconut folded in; savoury version served with sambol.

Available at heritage restaurants (Nuga Gama in Colombo), villages, and some tourist hotels for buffet. Sweet Wandu Appa with kithul treacle is dessert; savoury with pol sambol and dhal is breakfast. Different texture experience from regular hoppers — worth trying.
