You absolutely must try Kottu Roti. It is the ultimate highly popular local street food consisting of chopped flatbread mixed vigorously with vegetables egg and heavily spiced meat right on a blazing hot iron griddle.
A highly authentic traditional staple is simple Rice and Curry. It usually features a massive mountain of white rice surrounded by six or seven tiny incredibly flavorful vegetable curries including creamy dhal and spicy coconut sambol.
For breakfast order Egg Hoppers. They are incredibly thin bowl shaped pancakes with crispy edges and a soft steamed egg cooked perfectly in the middle. They are entirely unique to Sri Lanka.
