The ultimate traditional Sri Lankan breakfast is string hoppers. These are delicate nests of steamed rice flour noodles served with a mild, creamy coconut milk dhal and a highly spiced coconut sambol called Pol Sambol.

Another incredible breakfast staple is Kiribath, which is rich, thick milk rice cut into diamond shapes. It is usually eaten with a fiery red onion and chili relish known as lunu miris. Both dishes are widely available at local eateries early in the morning.
