You absolutely must leave right at sunrise usually around 6:30 AM. Do not wait for it to get warmer. The ocean is perfectly glassy and calm early in the morning making it incredibly easy for the captain to spot the dolphin pods from miles away. Once the sun heats the land later in the morning it generates strong thermal winds that whip the ocean into choppy whitecaps making the boat ride highly uncomfortable and spotting dolphins practically impossible.
