Lamprais is a rich, complex Dutch Burgher dish consisting of spiced rice, mixed meats, and sambol, baked slowly inside a banana leaf. Because it takes hours to prepare, it is rarely sold on casual street food carts. You will find the best, most authentic versions in established local bakeries and specialty cafes in Colombo.
