You do not need to go to a fancy hotel. The absolute best, crispiest egg hoppers are sold by small, unassuming local street eateries known as "hotels" very early in the morning and again in the late evening. Just look for a vendor rapidly swirling batter in small, curved wok like pans on the sidewalk.
