Pilawoos (multiple locations, main branch Colpetty) - most famous, open late (till 3am), chaotic loud kitchen with rhythmic cleaver sound. Chicken kottu here 500-800 LKR is a rite of passage. Alternatives: Nana's (Wellawatte - locals rate higher, less touristy), Hotel De Pilawoos (rival branded chain, similar quality), Green Cabin (Colombo 5 - cleaner setting, slightly premium). For the classic street-vibe experience: main Pilawoos late night. For quality: Nana's. Kottu is best eaten hot within 5 min of cook.
Also try cheese kottu (kids love it), egg kottu (protein boost), or dolphin kottu (mixed everything). Don't order 'spicy' unless you truly handle heat - the default is already medium-hot. Ask for 'small spicy' first if unsure.
