Eatery owner from the east (buriyani country) so let me guide you What it is and how it differs buriyani is the Sri Lankan take on biryani fragrant spiced rice cooked with meat (CHICKEN MUTTON or sometimes beef or fish) it shares the biryani DNA (basmati or samba rice layered and cooked with spiced meat) but the Sri Lankan version has its own character often using local SAMBA rice (shorter than basmati) a distinctive local spice blend (the Sri Lankan masala) and it tends to be RICHER and sometimes more moist and intensely spiced than a lighter Indian dum biryani the flavour profile leans to the Sri Lankan and the Malay and Moor culinary heritage so it tastes related but distinctly local What makes it special the depth of the local spicing the ghee richness and the accompaniments (below) it is hearty and aromatic a real treat Where to find the best YOU GOT IT the MUSLIM (Moor and Malay) areas and towns are the home of great buriyani the eastern towns (around here Kattankudy and the east) the Muslim quarters of Colombo (the Pettah and the Muslim neighbourhoods) Kandy Galle and any town with a strong Muslim community the best buriyani is at the Muslim run eateries and the dedicated biryani spots look for a busy Muslim restaurant especially around Friday prayers and you will eat well Served with buriyani comes with its companions a MALAY PICKLE or ACHCHARU (the tangy pickle the achcharu threads) a curry or gravy (a meat or a dhal) a boiled EGG often a mint or raita type sambol and the spicy condiments the sides cut the richness Occasion or everyday BOTH it is an everyday beloved meal at the Muslim eateries AND a special FESTIVE dish (it is central to celebrations weddings and especially RAMADAN and the Eid feasts when the best home buriyani appears) if you can get invited to an Eid or a Muslim family meal the home buriyani is sublime so for the real deal seek buriyani at a busy MUSLIM run eatery in the eastern towns or a towns Muslim quarter (Kattankudy the east Colombos Pettah Kandy Galle) it is the local biryani richer and locally spiced often with samba rice served with pickle a curry egg and sambol an everyday treat and a festive Eid centrepiece you will love it
The local biryani richer and locally spiced often with samba rice served with pickle a curry egg and sambol best at a busy Muslim run eatery in the eastern towns or a towns Muslim quarter and a festive Eid centrepiece this is exactly the real deal steer I wanted thank you
