I am flying in from Mumbai. Can I use my Indian Rupees at shops, or do I need to convert everything to Sri Lankan Rupees?

You MUST convert it. Indian Rupees (INR) are not accepted as legal tender anywhere in Sri Lanka. You can easily exchange your INR for LKR at the currency counters in the Colombo airport arrivals hall.

Also, be careful. Sri Lankan law technically restricts the import/export of large amounts of Indian Rupees. Convert what you need at the airport and use your Indian debit/credit cards at local ATMs for the rest.
