Walk-ins do happen, but call ahead the same morning to confirm the cook has time and ingredients. In Ella, several family-run home kitchens accept day-of bookings (Matey Hut and a few smaller home schools off the main street). Half-day format typically: arrive at 2-3pm, brief market or garden walk to pick fresh leaves, then cook 5-6 curries plus a coconut sambol, eat together at 6-7pm. Walk-in pricing runs 20-30 USD per person (slightly higher than pre-booked because the cook adjusts groceries last-minute). Ask before paying: how many dishes, does it include hoppers or kottu (these need special pans, often demoed not cooked by you), and is the recipe sheet provided to take home. Avoid any class that herds 12+ people; the magic is in small groups of 2-4.
If Ella is fully booked, head 15 minutes down to Bandarawela; less touristy, two excellent home kitchens there, and the cook can usually fit you in on short notice.
I did the same. Walked into a homestay-school at noon, was eating my own jackfruit curry by 7pm. One of my best Sri Lanka days.
